Okay so today I am going in with a different post idea for my blog than I usually upload. So since it being 2016 me and my family have all wanted to start eating better, healthier and more balanced! I don’t actually eat overly ‘bad’ meals, I am just a chocoholic however I felt when I had lunchtimes at home that would be my downfall. Me and mum began looking for different lunchtime recipes that interested us and we come across this easy, yet super yummy recipe. Now can I just add here if you’re looking for healthier, lean & especially fun and yummy meal ideas, whether it is snacks, breakfast, lunch dinner OR dessert, than look no further and check out Joe Wicks aka The Body Coach! He is huge on social media and now released his book Lean in 15 which includes 100 nutritious and very easy to prepare meals. Joe also includes throughout his books guides to working out, which primarily revolves around HIIT home workouts (High Intensity Interval Training). He also includes a weekly plan/example of his daily schedule what he eats at what times, work out times and also includes rest days!
We have made a few of his recipes now, this one being one of the first one that we tried and we LOVED it and have since had it again! From trial and error we learnt that really the first time we done this we could have potentially done with bigger avocado’s! We also done a slight different twist on it too with a small mixed salad, as instead of having two avocado eggs, we had one half each instead. He quotes that this meal contains more healthy fats, and it certainly has eggcellent taste (see what I don there, sigh) Now lets get in to it….
Here is just a quick run through of the ingredients/how to make this delicious meal! Then if you give it a go and like it, you should deffo think about investing in the book which is currently available for purchase on Amazon for £7.49!!!
For The Body Coaches Eggs in Avocado (Says serves 1) you will need;
- 4 rashers of smoked back bacon
- 1 ripe avocado
- 2 eggs
- Salt & Pepper
- 1 red chilli, finely sliced
Preheat your grill to maximum heat, then cook the bacon on the grill pan or baking tray. Grill for 3 minutes on each side if you like crispy bacon!
Whilst doing so, cut your avocado in half, remove the stone and scoop out around a tablespoon of flesh from the inside, still leaving you a generous amount to eat!
Crack an egg into each avocado half, season as you like and place on a microwavable plate. Cook the eggs in 30 second bursts for 2 minutes. We actually put them in an oven dish and cooked then I’m the microwave for around 3-5 mins low heat, it took a little longer however we got our desired eggs, nice whites and runny on the inside!
Serve the baked avocado’s with bacon, sprinkle of chilli … and as me and mum did a little side salad! YUM!
